Job Summary:
Bourbon & Bones Chophouse and Bar – Square One Concepts, is seeking a reliable and efficient Butcher to join the team. The ideal candidate will have a passion for creating exceptional dishes using high-quality ingredients and precise cooking techniques. This position requires someone who is detail-oriented, organized, and able to work in a fast-paced environment.
Duties/Responsibilities:
- Receive and inspect meat and seafood deliveries, ensuring that all products meet our quality standards and specifications
- Break down whole cuts of meat and seafood into portions for use in menu items, using knives, saws, and other cutting equipment
- Prepare and package meat and seafood for storage, labeling and dating items as necessary
- Work with the Executive Chef and Sous Chef to develop new menu items and ensure that all meat and seafood dishes are prepared to our high standards of quality and presentation
- Maintain a clean and organized butchery area, including proper storage and handling of meat and seafood, and following all safety and sanitation protocols
- Monitor inventory levels and order supplies as needed
- Train and mentor junior cooks and kitchen staff as needed
Required Skills/Abilities:
- Must be eighteen years old.
- Comprehensive knowledge of different cuts of meats and seafood, and experience breaking down whole cuts into portions
- Execute the preparation of high-quality ingredients according to established recipes and standards, ensuring accuracy, consistency, and timely delivery.
- Ingredient Organization: Maintain the pantry area, ensuring that all ingredients are properly stored, labeled, and easily accessible for use.
- Inventory Management: Assist in monitoring inventory levels, notifying the appropriate personnel when supplies need to be replenished to avoid shortages.
- Food Safety and Sanitation: Adhere to all health and safety regulations, including proper handling and storage of food, always ensuring a clean and organized work environment.
- Support the culinary team in the preparation of appetizers, sauces, garnishes, and other components required for our fine dining menu.
- Quality Control: Assist in conducting regular quality checks to ensure that all ingredients and prepared items meet our high standards for taste, presentation, and consistency.
- Maintain effective communication with the kitchen staff and management regarding inventory needs, menu changes, and any concerns related to food preparation or pantry supplies.
- Identify opportunities for streamlining processes and improving efficiency within the kitchen operations, contributing to the overall success of the restaurant.
- Ability to work in a fast-paced environment.
- Ability to work quickly and efficiently.
- Ability to work well as part of a team.
- Must be able to work flexible hours, including evening, weekends, and holidays.
- Must have a valid Food Handlers Certification
Requirements:
- High school or vocational school coursework in kitchen basics such as food safety, preferred.
- Previous experience as a butcher in a fine dining restaurant or similar environment
- Must have a valid Food Handler Certification
Physical Requirements:
- Prolonged periods of standing and working in a kitchen.
- Exposure to extreme heat, steam, and cold is present in a kitchen environment.
- Must be able to lift up to 50 pounds at times.
- Must be able to work late nights and unpredictable hours.
- Manual dexterity to cut and chop foods and perform other related tasks.
